Goan Chicken Vindaloo Curry is a fiery and flavoursome dish that originates from the coastal state of Goa in India. It is made by toasting and grinding the spices and marinating the chicken in the special Goan marinade. Enjoy this lovely dish with hot steaming rice!

Ingredients:
1 kg. gm of raw chicken
1 ½ large onion finely chopped
10-12 curry leaves
2-3 dalchini (sticks of cinnamon)
4 tbsp of vegetable oil
1 tsp black mustard seeds
Salt to taste
1 inch piece of jaggery
1½ cups of water
Tomatoes – 2 large/3 medium, pureed
Potatoes – 2-3 medium size, cut in cubes (Optional)
For Dry Spice powder:
8 dried Kashmiri red chillies
4 Spicy dry Red chilli.
1 ½ tsp jeera (cumin seeds)
10-12 black pepper corns
6 cloves
1 tbsp khus khus (poppy seeds)
Coriander Seeds – 1 ½ tbsp
½ tsp haldi (turmeric powder) (Heat in the end after switching off the gas)
For Wet Marinade:
1 tbsp of imli (tamarind paste)
1 tbsp red wine vinegar
½ inch ginger and 7-8 cloves of garlic, finely chopped
7-8 fresh red thai birds eye chillies (OR AS PER YOUR SPICE REQUIREMENT / 2 tbsp. Kashmiri red chilli powder.
Method:
1.First dry roast the ‘Dry spice powder ingredients’ in the order mentioned above one by one. Cool and grind into very fine powder.
2.Prepare the marinade paste for chicken. Grind the ‘Wet marinade’ Ingredients.
3.To the chicken, add the dry spice powder, wet marinade paste and salt, mix well. Cover and marinate for at least 1 hour.
4.In a thick-bottomed pan, heat oil. Add in mustard seeds. When it splutters add the cinnamon sticks. Stir for few seconds. Add in the onions. Cook till it gets transparent. When it starts getting little brown add in the marinated chicken.
5.Add the water by mixing it with the remaining marinade masala. Mix well. Check seasoning. Now add tomato puree, mix and cook.
6.Cover and cook on medium-high flame for 10-15 minutes or till done.
7.Now add jaggery and curry leaves. Stir well.
8.Cover and cook on slow flame for 5-7 minutes.
9.Serve hot with rice.
NOTE:
1.Can also add cut Potato cubes while cooking or fried potatoes in the end and cook for few more minutes till done.
2.Can use recipe for Mutton Vindaloo. Marinate with masala overnight for Mutton Vindaloo.
