A very very Happy and healthy New year to all!
Starting this new year with this very simple, healthy and comforting Vegetarian recipe to prepare in these winter months. Enjoy this with roti or with any dal and rice combination.

Quick recipe….
- Heat oil in a pan.
- Add tempering/wagar: 1 tsp. cumin seeds, 1/4th tsp. Asafoetida, Few curry leaves and 2 crushed garlic cloves.
- Add 1 large chopped onion and fry till light brown.
- Add dry spices: 2 tbsp. coriander powder, 1/2 tsp. turmeric powder, 1 tsp. Red chilli powder and 1/2 tsp. garam masala powder. Sauté for a minute.
- Add 2 large finely chopped tomatoes. Cook till tomatoes are soft and mushy.
- Add 2 heaped tsp. curd. Mix well and cook till the oil separates.
- Now add 2-3 large potatoes chopped and some salt. Cover and cook for 3-4 minutes.
- Add 2-3 cups of chopped beans, some salt and water to steam cook the vegetables.
- Cover and cook till done. Garnish with some coriander leaves and serve hot with roti/paratha or dal and rice. Enjoy!
