It’s the Christmas season, and what better way to celebrate than with a delicious fresh fruit n berry cake? This recipe from Donna Hay is both simple and delicious, making it the perfect treat to enjoy with tea or coffee.

INGREDIENTS
225g Self-raising flour, sifted
165g Caster sugar
125g Butter, softened
1 tsp Vanilla extract
2 Eggs
125ml milk
1 Apple, cored and thinly sliced
100g fresh or frozen Blueberries
2 tbsp Demerara sugar
METHOD
Preheat oven to 160C/140C fan/gas 3. Place flour, sugar, butter, vanilla, eggs and milk in the bowl of an electric mixer and beat until just combined.
Spoon mixture into a greased 22cm springform tin lined with non-stick baking paper. Top with the apple and blueberries and sprinkle with sugar.
Bake for 45 minutes or until the cake is cooked when tested with a skewer. Serve with vanilla ice-cream.
