This is a very healthy and tasty sabzi which can be enjoyed with roti or phulkas.

INGREDIENTS
Frozen/Fresh Soya beans – 1 ½ cup
Big Aubergine – 1, chopped cubed
Potatoes – 1 large, cubed
Methi Leaves – ½ cup, chopped
Coriander leaves – 1/4th cup, chopped
Onion – 1, chopped
Tomato – 1 large, chopped
Tomato concentrated paste – 1 tbsp.
Spring Onion – ½ cup, chopped
Ginger+garlic+green chillies paste – 1 ½ Tbsp.
Besan – 1 ½ Tbsp.
Spice mixes- Red chilli powder – 1 tsp.
Haldi – 1 tsp.
Coriander powder – 1 tbsp.
Jeera powder – ½ tsp.
Garam masala – ½ tsp.
Asafoetida – ½ tsp
Ghee – 2 tbsp.
METHOD:
1.Take a pressure cooker. Heat ghee, fry Onion till soft and then add haldi and ginger+garlic+green chillies paste. Fry till the rawness disappears.
2.Add the besan and fry till the besan is cooked.
3.Once fried well, add the chopped tomatoes and cook till soft.
4.Now add the soya beans and cook for 6-7 minutes.
5.Now add all the cut vegetables and methi leaves and coriander leaves and fry for few minutes.
6.Now reduce flame add the remaining spices and salt. Mix well and cook for 2-3 minutes. Add 1 cup water. Check all seasoning and salt is as needed, close the cooker with whistle and pressure cook for 3 whistles or as per your pressure cooker.
7.Serve hot with Phulka or Bajra roti or as side dish for rice and curry.
