INGREDIENTS
For Pasta-
Whole wheat Spaghetti pasta or any pasta of your choice – 400 gms.
Chestnut mushrooms – 250 gms. cleaned and sliced
Onion – 1 large, chopped
Spring Onions – 100 gms. chopped both white and green parts.
Garlic – 1 tbsp. minced
Crushed red chilli flakes – 1 tsp.
Pepper powder – 1/2 Tsp.
Italian dried mixed herbs – 1 tsp.
Chicken stock – 1/2 cup
Fresh cream – 150 ml.
Grated Cheddar cheese – 1/2 Cup
Finely grated Parmesan cheese – For garnish
Coriander Leaves/ Fresh Parsley – 2-3 tbsp, chopped
Salt to taste
Light Olive Oil/ Butter – 1 Tbsp.
For Pan fried Chicken–
Chicken breast – 2 whole, with light slits
Salt and pepper-
Garlic powder – 1/4th Tsp
Cajun powder – ½ tsp./ or any other spice blend of your choice.
Oil
METHOD
Cook the pasta in enough boiling water. Add salt and oil and cook till tender and drain.
Heat oil in a pan, add minced garlic and sauté for few seconds. Then add crushed red chilli flakes and onion and cook till it softens. Then add the chopped spring onions and fry for around 2 minutes.
Now add the mushrooms and cook till it gets tender. Add the Italian herbs and sauté for few seconds.
Next, add the chicken stock and cream and mix well. Then add the Cheddar cheese. Mix well and cook at low heat till the cheese melts completely. Add little salt and give it a stir.
Now add the cooked pasta, pepper powder and chopped coriander/parsley leaves and mix everything well. Check the seasoning.
Pan Fried Chicken-
Clean and pat dry the chicken breasts. Make light slits across the chicken breasts. Marinate it with salt, pepper, garlic powder and Cajun spice powder with little oil. Marinate the chicken for an hour.
Take a pan. Add a tablespoon of oil/butter. Pan fry the chicken breast till its cooked and golden in colour. Remove, cool slightly and slice it. Place it on top of the pasta before serving.
Optional: Finely grate Parmesan cheese over the pasta and serve.
Additional Points:
1. I have used Whole wheat pasta which is healthy and can be eaten in small quantity. You can use plain pasta as well.
2. The amount of crushed chilli flakes can be altered as per your spice preference.
3. You can use either concentrated chicken stock or chicken stock cubes. If using concentrated chicken stock use less than 1/4th cup.
