RECIPE IN DETAIL…..
INGREDIENTS
Rawa (Semolina) – 1 Cup
Sugar – 1 Cup
Ghee (Clarified butter) – 2-3 Tbsp
Water – 2 Cups
Fresh Pineapple – 3/4th cup finely chopped and 1/4th cup in the end.
Pineapple Essence – 1 Tsp
Yellow food colour – 1/4th Tsp (Optional)
Dried nuts like chopped cashew, almonds or any other of your choice
Ghee for added taste at the end – 2 tbsp.
METHOD
First keep water for boiling. Add to it the 3/4th cup of finely chopped pineapple and 1/4th cup of sugar. Let it simmer for few minutes till the pineapple flavour and taste infuses in the sugar water.
In another vessel, heat ghee and fry some nuts. Once it is lightly browned add in the semolina. Roast for 4-5 minutes till it starts colouring slightly.
Add the remaining sugar and mix well. Continue to cook the mixture well for few more minutes. When the rawa becomes fragrant and sugar dissolves, lower the flame to minimum and pour the boiling sugar and pineapple water with the essence and colour and the remaining 1/4th cup pineapple pieces. Mix well and cook till it’s well combined.
In the end add 2 tbsp of ghee and mixing well cook for further 2-3 minutes. Mix in the nuts and serve warm.
